recipe of the day: gazpacho

Last night I made delicious gazpacho! It's only going to get better as all the flavors marry in my fridge, so I can't wait to eat some more for lunch.



Gazpacho

3 pounds ripe tomatoes, peeled, seeded, and chopped
1 cup chopped red onion
1 large red sweet pepper, seeded and chopped
1 tablespoon garlic
2 teaspoons chopped, seeded jalepeno
6 tablespoons fresh herb
1/4 c olive oil
3 tablespoons red wine vinegar
3 tablespoons fresh lemon juice
1 1/2 cups peeled and seeded cucumbers

1. blanch tomatoes in a pot of boiling water for 30 seconds, drain in colander, peel tomatoes, and cut each tomato in half. gently squeeze tomatoes to extract seeds and places tomatoes in food processor.
2. combine all ingredients (except fresh herbs) in the food processor and pulse to a coarse texture.
3. transfer to bowl, add chopped fresh herbs, and serve with a crusty bread or homemade croutons.
